Kodiak Cake Love

Good morning, everyone!  It’s finally Friday—woohoo!  If you had the week off from work because of Independence Day, lucky you.  If you didn’t, the good news is 5 o’clock will roll around soon enough.  Hopefully.


I woke up around 6:30 a.m., drank some coffee, and started thinking about what to make for breakfast.  Eggs?  Had ‘em yesterday.  Cereal?  Nah.  Oatmeal?  Meh.  Then I remembered a certain pancake mix situated in the pantry.

Done and done!  I’ve never had Kodiak Cakes before, but a lot of the blogs I follow rave about them, so I figured it was time to see what the hype is all about.

Cue the hype.  And this is coming from an egg/omelette girl.  I shy away from pancakes and waffles because they’re usually sugar-laden and carb-heavy, and I know I’ll be hungry two hours later.  However, these Kodiak Cakes were delicious.  With subtle hints of honey and whole-wheat—and only 2g of sugar—these flapjacks tasted healthier and heartier than traditional out-of-the-box mixes.

I topped my stack with cantaloupe and a smear of PB for some added staying power.  Next time, I’m going to add a mashed banana to the batter and maybe some vanilla protein powder.  Pancakes and/or waffles—yay or nay?  Have you tried Kodiak Cakes?
